The other day, as we were going to bed, I told my husband that since the weather forecast for the following day was so cold (-20!), I wanted to do nothing more than sit in front of a fire, write my blog posts, crochet some hats and drink copious amounts of hot beverages.
I woke up and got right to work on that last one.
As my dad was making pancakes and eggs for my kids (he’s so sweet), I was busily whipping up all the ingredients for one of my favorite new drinks: caramel apple spiced cider. Yes, you read that right. And it’s every bit as delicious as it sounds. (Thanks so much to my favorite coffee shop, Green Plow, for this heavenly beverage).
As my kids finished off their breakfast, I was putting the finishing touches on my drink.
While I did have to make some caramel sauce, whip up some whipped cream and spice some cider, it didn’t take too terribly long, because my kids practically inhale pancakes.
After everyone had cleared the table, I sat down with a mason jar full of liquid apple pie and happily sipped my sweet concoction.
That, and a gluten-free banana muffin, were my breakfast. No, I’m not ashamed.
Homemade Caramel Apple Spiced Cider
This drink is super easy to make, especially when you have caramel sauce and whipped cream made in advance. (Yes, whipped cream. It might sound odd to put in the drink, but it’s amaze-balls.)
However, if you’re super determined to have this drink and have all of the ingredients for said caramel sauce and whipped cream, it’s not so bad either.
You’ll need:
- 1 tbsp (or less … or more) caramel sauce (Find my caramel sauce recipe here.)
- 2 cups spiced apple cider (Find my directions for spiced cider here, or skip the whole spicing part and just warm up some cider.)
- Whipped cream (Find my whipped cream recipe here.)
- Pint-size mason jar (Sometimes, I throw on one of my Cuppows.)
Directions
Put 1 tbsp (or more or less) in the bottom of pint-size mason jar. Carefully pour in your spiced cider and stir to mix them together.
Top off with fresh whipped cream, a drizzle of caramel sauce and a dash of cinnamon.
Enjoy in front of a warm fire with a good book and soft music in the background.
The other day, I had at least 3 double servings (mixed it in a tall travel mug that holds more) of pumpkin spice latte (the instant stuff). It was SO GOOD!!! I also like hot chocolate and my father-in-law’s Christmas tea. It’s a mixture of teas, fruit juices, cinnamon sticks, and red hots. It’s delicious by itself but even better with a splash of rum. 🙂
Family fave is wassail – a piping hot & citrusy combo of cinnamon-spiced apple juice, with a bit of cranberry juice, orange juice, & lime juice. Especially yummy re-warmed in the evening, with a generous shot of red wine, while cuddling on the couch with my hubby!
